This weekend was GREAT! Elizabeth, my best friend from Chicago, came to Omaha to visit/spend the weekend!!! We had a blast -- I didn't even know it was possible to pack so many things into two days!!

We enjoyed yummy sushi at BLUE and hit up the shops downtown, saw Chris Saub play (one of my new favorite local music artists), got pedicures, shopped, saw the movie Dear John, took a scenic drive to a nearby lake to check out the lot her relatives will be building on, we had a glass of wine at Brix (of course), had some yummy gelato at Gelato Joes, oh yes and did I mention we shopped?! :)

We decided this weekend it has been about 20 years since we first met at Tot Spot Preschool! And the rest is history... I don't know what I'd do without my best friend! :)

The Classy Gourmet - Girls Night Out!

This past weekend some of my best friends and I had a girls night out at The Classy Gourmet! We had SO much fun doing an Italian cooking class! We were assigned the marinara, and let me tell ya this was not Prego out of a jar - it was the "real deal!" ;) Thank goodness for Laura who decided we better get serious and start making the sauce otherwise we would've been goofing off until the wee hours of the morning - haha!

A few days ago, my brother's friend needed a dog sitter. When I asked Wilson if that would be okay, I could tell by the look of his glowing, happy eyes and waggly tail that Wilson was eager for Lucy to come stay overnight. Meet Lucy, such a sweetie...

You must check out this adorable website I heard about through a friend of mine! They're DotPops and they're adorable! My friend KatieJo knows the girl that owns this cute little company and actually brought some to work and they were yummy! Our Valentine's Day!

This year Valentine's Day was special because I got to spend the whole weekend with the one I love in Kansas City! Unfortunately, I don't have any pictures to share... I think we were both so excited to see/spend time together that we completely forgot to even take a picture!

We stayed in The Plaza on Friday and Saturday night and did lots of shopping and ate at some very yummy restaurants! And luckily we both made it home safely... I had NO idea it was supposed get this bad out!! Poor Tim was quite the trooper, it took him 5 hours to get home. At times he said he was driving 10 mph b/c of all of the blowing snow... :(

Tim will be home from Fort Leonard Wood, MO end of March. I will be going down to visit him and for his graduation at that time. He'll then be done with his training and will return to Omaha where he'll stay active duty and work full time for the ARMY. He's very, very anxious to be home, and Wilson and I are just as excited for him to be back! :-)

Chocolate Fondue Recipe!

Last night I got together with some friends for dinner club. We all had a fun time! I offered to bring the dessert -- KatieJo offered her dessert recipe! :) I was so glad she did because it was SO delicious, I want to share it with YOU! It was chocolate fondue! This recipe you can't mess up, so easy!

Chocolate Fondue:

1 T. Butter

16 oz milk chocolate chips

1 bag small marshmallows

1/3 C. milk

1 C. whipping cream

Grease slow cooker with butter. Turn to high for 10 min.

Meanwhile, mix chocolate, marshmallows and milk together in a bowl.

Put mixture in slow cooker.

Cover and cook on low for 30 min. Stir, cover and cook another 30 min.

Gradually stir in whipping cream and cook another hour.

**We served it with rice crispies, strawberries, bananas, cheesecake bites, etc. KatieJo had the cutest little individual bowls for each person and sprinkled graham crackers on top of the chocolate (so it was like s'mores). Yummy! Enjoy!

Animal Planet's Puppy Bowl!

While most of you were watching the Super Bowl, Wilson and I were tuned into the Puppy Bowl! If you haven't seen it, you're missing out on an ear-raising, fur-flying good time! ;) It's an adorable little production of highly energetic, clumsy little puppies that literally run in cirlces around eachother! We witnessed many puppy pile-ups. A "touchdown" is made when one of the puppies drags a toy into the end zone! Some of Wilson's favorites were Blaze (who only chews on designer shoes) and Bandit (can bark the alphabet backwards). You can even vote online for the puppy bowl MVP! :) Oh, and I can't forget to mention they put a camera in the waterbowl... lol!! If you missed it this year, I suggest you watch it next year! The Weekend!

Today Wilson and I went up to the lake where we had a little fun outdoors! :) Dad and the dogs did a little ice fishing...

While Mom and I did some cross country skiing!

Seems so crazy that a few months ago we were boating down this same path!!!

Last night the whole family got together at Lazlo's in Omaha and we celebrated Jon and Mark's birthdays!!

So much for my hopes of an early spring. :( But, spring will seem so GREAT once it finally does get here! :)
